The Free Range Farm Girl ~ Cooking Grassfed Beef by Shannon Hayes is one of our favorite cookbooks. I am going to cook this tonight because I can cook it in advance and reheat it when my family is home from after school activities. I serve this with a fresh organic baby spinach salad and make my home made dressing of olive oil, a nice aged balsamic vinegar, a pinch of Maldon salt and half a lemon—whisk until it thickens.
